Savory sweet potato waffles

 These were good. Fun (plain) alternative to a potato side.


EQUIPMENT

INGREDIENTS
 

  • 2 cups mashed cooked sweet potato
  • 2 large eggs
  • ½ cup shredded cheddar cheese
  • ½ teaspoon garlic or onion powder optional
  • pinch of salt optional
  • cooking spray or oil for greasing waffle maker

  • Preheat mini waffle maker and grease well. In a bowl, mix mashed sweet potato, eggs, cheddar cheese, garlic powder, onion powder, and salt until combined.
  • Add about 2-3 tablespoons of batter to the waffle maker and spread slightly. Cook for 4-6 minutes (depending waffle maker), or until the waffle is set and lightly golden.
  • Carefully remove and let cool on cooling rack for 1-2 minutes. Waffles will firm up as they sit.
  • Repeat with remaining batter. Use 2 mini waffles as a burger bun, sandwich bun, or serve as-is.

NOTES

Cook these longer than traditional waffles so they hold together well. Avoid opening the waffle maker too early or they may split. For best texture, let them cool slightly before using as burger buns.
If you want a firmer, more structured waffle, you can add: ⅓ cup flour + ½ teaspoon baking powder
