Good easy sheet pan meal!
Preheat oven to 400 degrees
dice peppers and onions into slivers
Put them in a bowl and drizzle with olive oil, salt and pepper
put into oven on sheet pan for ~10 minutes
while they are cooking, thinly slice the ground chicken
put into bowl that peppers were in
add some oil and fajita seasoning *made my own below
mix peppers and onions and add chicken
Bake for 8-10 minutes until the chicken is at 165 degrees.
A few minutes before serving, put tortillas into tin foil and add to oven.
serving options:
- salsa
- guacamole
- limes
Fajita seasoning mix
- 2teaspoons chili powder
- 2teaspoons ground cumin
- 1teaspoon dried oregano
- 1teaspoon garlic powder
- 1teaspoon onion powder
- 1teaspoon sweet paprika
- 1teaspoon granulated sugar
- 1teaspoon kosher salt (such as Diamond Crystal)
- ⅛teaspoon cayenne pepper, plus more to taste
