Ingredients:
6 peppers
Package of ground chicken
Taco seasoning
Salsa
2 Tomatoes
Quinoa
Small can black beans
Tortilla Chips
Shredded mozzarella cheese
Instructions:
Cook quinoa
Preheat oven to 350
Wash the peppers
Cut the tops off the peppers and and remove the seeds
Spray baking sheet with olive oil and place peppers cut side down. Bake until stuffing is ready
In a large skillet, add ground chicken, taco seasoning, and washed black beans
Cook until chicken is done
Mix tomatoes into the chicken mix and stuff into the peppers
Top with some shredded cheese and put back into the oven
