Salmon Bowls Two Ways

Salmon, Veggie, and Rice Bowl

Not the prettiest presentation but yummy


I liked how veggie forward this dish was. I liked breaking up the salmon and serving it all together in a bowl. 

Serves two

~1lb salmon

- 2 mini cucumbers, chopped

- mini sweet peppers, chopped

- Carrot Ginger Dressing (listed in super salads post)

- Cilantro

- Rice - I use Jasmine or Basmati 

- Paprika

- Garlic powder  

I coated the salmon in paprika and garlic powder. Then I wrapped it in a foil packet and put it in the toaster over at 350-375. It took a bit longer in the toaster oven as opposed to the oven but I liked that I didn't have to heat up the whole oven. 

Then I sliced the mini peppers, cucumbers, and chopped cilantro and coated it in the salad dressing.  

The IG post called this a "quick and easy dinner idea." If the dressing and rice are already made then I would agree but otherwise it wasn't. Time consuming although not complicated.

Poke-Inspired Bowl Parts of the bowl:

- salmon

- diced cucumbers - Asian cucumber marinade 

- sesame spinach (can make ahead) - recipe in blog 

- rice (can make ahead) 

- avocado 

- seaweed

- sauce

— mayonnaise 

— Thai sweet chili sauce 

— hot sauce

— water to thin 


Dice salmon into cubes. Season generously with paprika and garlic powder. 

Air fry at 400 degrees for ~8 minutes
