Yum! Vegan and super creamy.
The only thing is potentially adding more protein? The original recipe suggested adding black beans.
Steps:
Chop peppers, mushrooms, and onions. I did three peppers, 2 big onions, and a box of mushrooms.
Sprinkle with salt, pepper, and olive oil.
Bake at 350 for ~45 minutes
Prepare spaghetti squash - I like cutting in half, sticking in the instant pot with a couple cups of water and pressure cooking for 7 minutes (total maybe takes 15-20mins).
Cashew Cream:
1 cup cashews (soaked)
1/2 teaspoon salt
3/4 cup water
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp garlic powder - I used 3 large garlic cloves and it was aggressively garlicky.
sprinkle of cayenne
