Would up the veggies in this recipe! It was one of the fastest and easiest recipes that I have made in a while! I served it on top of rice.
Suggested ingredients:
1 tsp olive oil
12 oz (one package) fully cooked chicken sausage, sliced into 1/4 inch pieces (I used Trader Joe's Garlic Chicken Sausage)
4 bell peppers - mix of colors
2 onions
1 cup canned diced tomatoes and some juices
1 tsp thyme
