HONEY ZA’ATAR CHICKEN WITH CHICKPEAS

INGREDIENTS

  • 5 chicken thighs I used boneless and skinless

  • 1 tbsp Za’atar

  • 1/2 tbsp Smoked Paprika

  • Salt and Pepper, to taste

  • 1 lemon, juiced

  • 1/3 cup honey I think I used much less honey and lemon juice

  • 4 cloves Garlic, diced I forgot this and it was still delish

  • 15 oz can chickpeas

  • 1 red onion

  • red pepper, to taste didn't use this

  • fresh Dill, for garnish didn't use this

  • 2 tbsps Olive Oil

DIRECTIONS

  • Preheat oven to 400 degrees F.
  • Add za’atar, smoked paprika, salt, and pepper to chicken thighs. Ensure all pieces are coated in seasonings. Add olive oil to a skillet and warm over medium heat. Add chicken thighs and brown on both sides, about 3 minutes per side. Place on a baking sheet.
  • Add chickpeas to baking sheet. Roughly slice a red onion and add to baking sheet.
  • Combine honey, lemon juice, and diced garlic cloves. Mix together and pour on top of chicken and chickpeas, ensuring everything is coated.
  • Baked for 20 minuets.
  • Eat!
